The History of Pho

A BOWL OF PHO / Vietnam's treasured beef noodle soup that brings families together

This article, written by Mai Pham, discusses the origins of pho and its political and cultural influences. All Vietnamese readers will relate to her description of eating pho with her family as a child.

As children, we remember waking up on Saturday mornings to the fragrant smell of pho simmering in the kitchen. There was the familiar clank! clank! of metal spoons on porcelain and the rattle of chopsticks settling onto countertops. Our parents had risen hours before to start the pho; they roasted the ginger and onion, carefully tended to the broth to keep it clear, and pulled the ends off of the bean sprouts, while listening to Vietnamese music. This was love.

For the love of pho

We scour S.F.'s Little Saigon to find the best Vietnamese beef noodle soup

We have to give SF Chronicle writers Carrol Ness and Amanda Berne credit for a well written article on the best pho in San Francisco. They discuss (quite accurately)what constitutes a good bowl and the differences between Northern and Southern style pho. In fact, this article was the inspiration for this blog.

Their restaurant recommendation are spot on. Turtle Tower (Tap Rua for you VN folks) is one of our top choices in San Francisco. We stop there whenever we are in town!

The article is followed by a helpful translation guide to pho menus and a recipe for pho ga (chicken pho).
